    Are pinks caught in mid august worth canning?

    really depends on personal preference. If your catching them in Salt water - Yes. If your catching them in fresh water and If they are still fairly "fresh" we used to keep them, (lightly) smoke them; and can em..! If the males have their Hump, and the females are no longer silver colored.... NO (IMHO)

    Pinks and Chums are the bait fish of salmon. IMHO, unless they are still ocean fresh, just toss them back or use them for bait. There is nothing wrong with a nice fresh Pink filet on the grill, but most of the time, they aren't worth the trouble of canning. To me, it would be like canning trout. Go dipping for reds or troll for Silvers and can some of them. Silvers often run with pinks, so put on a bigger lure and try for those.
