Grilling Salmon using a Southwest Rub.

2 tbsp chili powder
2 tbsp packed brown sugar
1 tbsp ground cumin
2 tsp minced garlic
2 tsp cider vinegar
1 tsp Worcestershire sauce
1/4 tsp ground red pepper

Combine all dry ingredients
Then when ready to use put the vinegar,worcestershire to make a paste.Press rub onto salmon and refrigerate for a couple of houres before grilling. Cook on barbecue on foil skin side down. Don't forget to debone before rubbing. refrigerate any leftover rub. Can use on a flatiron steak yummm.

Any left over cooked salmon.

Salmon & Potato Cakes

1 3/4 cups of cooked and deboned salmon
2 cups prepared mashed potatoes
3 scallions, chopped
2 T Dijon mustard
1/4 tsp salt
1/4 tsp ground pepper
crushed Corn flake crumbs for coating
Preheat oven to 375

Mix first 6 ingredients and shape into patties.( they don't have to be perfect) Coat with corn flake crumbs. reshaping the patties as you go, arrange in a skillet that is oven proof prepared with canola oil for browning. Brown chrisp on both sides, put the pan into the oven and cook for 15 min. serve hot.
