    Learn the fundamentals of canning meat and vegetables from 6 to 9 PM, Oct. 20th at the Cooperative Extension Service,Mat-Su/Copper River District Office,809 S. Chugach St. Suite No.2 in Palmer. Cost is $15 and participants will be able to take home the food that they prepare.

    They are who I learned it from; they're good. They also have a service where they'll test your canner for safety. And they have a ton of free (downloadable) info, from how-to's, to canning recipes.

    After learning from them, you'll understand that if you don't do it right (maintain the proper temp/pressure for the proper time) your product will harm people's health.
